Goat Cheese Cream with Honey and Olive Oil

| 200 g | fresh goat cheese |
| 60 g | liquid acacia honey |
| 40 ml | cognac |
| 130 g | single cream |
| For the sauce: | |
| 80 ml | olive oil |
| 40 g | honey |
| 1 shot(s) | lemon juice |
Whisk the single cream until stiff. Stir together the cheese, honey and Cognac. Fold in the whipped cream. Evenly divide the cream into 4 cups and leave to set in a cool place.
For the honey sauce mix all ingredients with a hand blender.
Turn out the goat cheese cream onto dessert plates and drizzle with the honey sauce.
