African Chicken and Vegetable Curry

Ingredients

400 g chicken breast fillet, cut into strips
200 g coconut milk
200 ml orange juice
  paprika powder
  curry powder
onion, sliced
2 clove(s) garlic, chopped
5 tbsp soy sauce
red bell pepper, diced
1 large carrot, sliced
spring onions, sliced
1 tbsp oil
  chilli flakes

Method

In a bowl, mix the orange juice with half of the garlic and the soy sauce. Add the chicken strips and marinate for 4-5 hours in the refrigerator.

Drain the meat and season generously with paprika powder. Keep the marinade.

In a wok or pan heat the oil. Fry onion, the remaining garlic, carrot and the chicken strips until the meat is golden brown. Add spring onions and bell pepper, the marinade and the coconut milk. Bring to a boil. Reduce the heat and cook for a few minutes until the meat is done. Season to taste with chilli flakes, soy sauce, paprika powder and curry powder.

Serve with rice.
