Codfish Curry

Ingredients

3 tbsp tikka masala curry paste
600 g coconut milk
red hot chilli peppers, finely chopped
bay leaves
codfish fillets, cut into 3cm cubes
carrots, sliced
1/2 glass(es) bamboo sprouts, drained
2 handful button mushrooms, halved
1/2 can(s) princess beans, drained
  lemon juice
  white wine vinegar
  palm sugar
  salt and pepper

In a saucepan bring the coconut milk with curry paste, chilli pepper and the bay leaves to a boil. Cover and simmer for 5 minutes. Stir in the vegetables and simmer for 10 minutes. Add the fish and cook for another 4-5 minutes.

Season to taste with salt, pepper, lemon juice, vinegar and palm sugar. Remove the bay leaves.

Serve with rice.
