Salmon Fillets with Mango Salad and Basil

A healthy dish!

Ingredients

60 g fresh basil leaves
60 ml olive oil and 1/2 a tbsp extra
1/2  mango, peeled and diced
tomato, diced
1/2  cucumber, diced
1 tbsp fresh lemon juice
skinless salmon fillets, about 200g each
  salt and pepper, to taste
80 g mixed green salad of your choice
lemon wedges

Method

Place all basil leaves except two in the food processor and process until fine. Or finely chop them manually. Combine with the olive oil.

Place mango, cucumber and tomato in a bowl and stir in lemon juice. Add half of the basil oil, season with salt and pepper.

Press a basil leaf on top of each salmon fillet. Heat ½ tablespoon of olive oil in a pan over medium heat. Cook the fillets top side first for 3-4 minutes. Season with salt and pepper. Turn the fish and cook the other side.

Place each fillet on a bed of green salad. Top with the mango salad and drizzle with the remaining basil oil. Serve immediately, garnished with lemon wedges.
