Swede Fritters with Goat's Cheese Dip and Pine Nuts

Ingredients

200 g fresh goat's cheese
1 dollop(s) single cream
2 tbsp pine nuts, toasted
  maple syrup
1 clove(s) garlic
400 g swede
200 g potatoes
onion
egg
2 tbsp flour
2 tbsp lard
  salt and pepper
  cayenne pepper

Method

Rub the inside of a bowl with the halved garlic clove. Combine the goat's cheese and the cream in the bowl and stir until smooth. Season to taste with salt, pepper, cayenne pepper and maple syrup and fold in most of the pine nuts. Spoon into small individual bowls and garnish with the remaining pine nuts.

Peel the swede, potatoes and the onion. Grate all vegetables and add the egg and the flour. Season with salt and pepper and mix well.

In a pan melt the lard. Add spoonfuls of the mixture into the pan and flatten. Fry the fritters from both sides until golden and crispy. Drain on kitchen paper.

Serve the swede fritters on warmed plates together with the dip.
