Bulgur salad

Ingredients

200 g bulgur
3 bunch(es) flat leaf parsley, finely chopped
1 bunch(es) fresh mint, finely chopped
tomatoes, seeded and diced
cucumber, peeled, seeded and diced
spring onions, trimmed and thinly sliced
lime, juice
red hot chili pepper, or 2, if you like it very hot, seeded and finely chopped
4 tbsp extra virgin olive oil
  salt and freshly ground black pepper, to taste

Method

Place the bulgur into a bowl and pour over the double amount of hot salted water or vegetable stock. Allow to soak and cool down for 20 minutes.

Whisk the lime juice with the olive oil, salt and pepper.

If necessary drain the bulgur. With your fingers loosen any lumps in the bulgur. Add tomato, cucumber, spring onions, chili, parsley and the mint. Pour over the marinade and toss gently. Adjust seasoning.
