Lamb and Pumpkin Stir-Fry

Ingredients

500 g pumpkin pulp, cut into 2cm cubes
1 bunch(es) spring onions, sliced
4 tbsp oil
  salt and freshly ground black pepper
2 sprig(s) mint, chopped
200 g yoghurt
400 g lamb mince
  cinnamon
  cumin
portions

Method

Preparation time: ca. 30 min / Cooking / Baking Time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Stir the mint into the yoghurt. Season to taste with salt and pepper.

In a large pan, heat the oil. Stir-fry the pumpkin for 5 minutes. Add the lamb mince and stir-fry for another 5 minutes or until the lamb is crumbly and done. Add the spring onions and cook stirring for 2 more minutes. Season to taste with salt, cumin and cinnamon.

Serve with the yoghurt dip and fresh white bread.
