Ingredients

8 medium potatoes
  oil for frying
  For the Dressing:
  salt and pepper
3 tbsp honey
5 tbsp lemon flavoured olive oil
1 tbsp fresh rosemary, finely chopped
1 tbsp parsleys, finely chopped

Method

Preparation time: ca. 25 min / Cooking / Baking Time: ca. 45 min / Grade of difficulty: medium / Calories per portion: n/a

Cook the peeled potatoes in salted water until done. Drain and allow to cool.

Cut the potatoes into small cubes and roast them in a pan in oil until golden brown all around. Drain briefly on kitchen paper, then transfer into a salad bowl.

Mix the ingredients for the dressing, pour over the potatoes, toss and allow to soak for a minute. Adjust seasoning and serve still warm as an accompaniment to steak or fried fish.
