Ingredients

200 g white chocolate, chopped
125 g whipping cream
250 g flour
3 tbsp cocoa powder
50 g cornflour
1 tsp baking powder
150 g butter, soft
75 g sugar
1 pack(s) vanilla sugar
1 medium egg
  salt

Method

Melt the chocolate in the cream. Cool for 2 hours.

Mix together the flour, cocoa, cornflour, baking powder, butter, sugar, vanilla sugar, egg and a pinch of salt. Knead until the dough is well combined. Wrap in cling film and cool for 30 minutes.

Preheat the oven to 180°C.

Roll out the dough and cut out rounds. Arrange the rounds on a lined baking tray. Bake for 8-10 minutes.

Whisk the chocolate cream until stiff. Spread half of the cookies with the cream. Top with the remaining cookies. Store in the fridge.
