Mince and Leek Soup

Party soup, especially as a midnight snack

Ingredients

300 g minced meat, beef, or beef and pork mixed
1 large onion, chopped
2 tbsp bacon, diced
  oil
1 stalk(s) leek or 2 small stalks
2 large potatoes, peeled and quartered
200 g soft cheese or single cream
2 tbsp sour cream
600 ml vegetable stock
  salt and pepper
  nutmeg

Method

Preparation time: ca. 20 min / Cooking / Baking Time: ca. 40 min / Grade of difficulty: medium / Calories per portion: n/a

In a large pan, fry the onion and the bacon in oil until golden. Stir in the minced meat and cook stirring until brown and crumbly. Add the leek and cook stirring for a couple of minutes. Pour in the stock and add the potatoes. Bring to a boil and simmer for 20 minutes.

Stir in the soft cheese or the cream and the sour cream and bring to the boil again. Season to taste with salt, pepper and nutmeg.

Ladle the soup into soup plates or bowls and serve hot with fresh crusty bread.

I simply love this recipe! So quick and tasty!

Yesterday I tried a variation: I used chicken legs instead of the minced meat. And it was just as tasty and simply something different.
