Fried Salmon with Vegetables in a Creamy Sauce

Ingredients

red onions, sliced
2 small courgette, sliced
carrots, sliced
2 bulb(s) fennel, sliced
salmon steaks
lemon, juice and zest
3 tbsp oil
  salt and freshly ground black pepper
200 ml single cream
200 ml vegetable stock
  sugar
portions

Method

In a saucepan, heat the oil. Add the vegetables and cook stirring occasionally for 6-7 minutes. Season with salt and pepper. Remove the vegetables from the saucepan and set aside.

In a pan, fry the fish for 2-3 minutes each side. Season with salt and pepper. Set aside and keep warm.

Pour the cream and the stock into the saucepan and bring to a boil and cook until slightly thickened. Season to taste with lemon juice, salt, pepper and sugar. Return the vegetables and cook until heated through.

Ladle the vegetables with the sauce into deep plates and place the fish on top. Serve sprinkled with lemon zest.
