Ingredients

225 g chicken breast fillets
2 tbsp olive oil
1 small onion or shallot, finely chopped
4 clove(s) garlic, finely chopped
1 tsp paprika powder
lemon, the juice of
2 tbsp fresh parsley, chopped
  salt and freshly ground black pepper, to taste

Method

Sandwich the chicken fillets between 2 sheets of cling film and flatten with a rolling pin or the back of a frying pan to approximately 5 mm thickness. Cut the meat into strips of approximately 1cm wide.

Heat the oil in a large frying pan and stir-fry the chicken strips with the onion, garlic and paprika over a high heat for about 3 minutes until cooked through and lightly brown. Add the parsley and season to taste with lemon juice, salt and pepper.

Serve hot with lemon wedges and garnished with parsley.

This succulent tapas dish is especially nice when it's accompanied by alioli and fried potatoes.

Variation:
This is also very tasty if you use pork or turkey breast.
