Duck with Calvados Sauce

Ingredients

duck breast fillets
150 ml cream
3 tbsp Calvados
1/2 tsp sugar
10 g butter
  salt and pepper
portions

Method

Preparation time: ca. 5 min / Cooking / Baking Time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Season the duck breasts with salt and pepper. Place in a dry pan, skin side down and roast over medium heat, turning occasionally, to the doneness you like and until the skin is golden and crispy. Take out of the pan and keep warm.

Pour away the fat and loosen the juices in the pan with Calvados. Stir in the cream and butter. Season to taste with salt, pepper and sugar and simmer for about 3 minutes.

Cut the duck breasts in thin slices and serve with the sauce.
