Garlic dip

Ingredients

3 clove(s) garlic, chopped
egg yolk, at room temperature
  rapeseed oil or sunflower oil or a very mild olive oil
1 tbsp lemon juice
  salt and pepper

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

In a narrow high vessel, just wide enough for the blade of your hand blender, place the garlic and add a good pinch of salt, the egg yolk and lemon juice. Mix until well combined. Add oil in a thin stream, blending constantly until the aioli is thick and smooth.

Season to taste with salt and pepper.

Goes well with fish soup, roast beef, boiled eggs, fondue or crudités.
