Ingredients

200 g corned beef, canned
1 small red onion, chopped
2 clove(s) garlic, finely sliced
4 small tomatoes, chopped
beef stock cube, dissolved in a little hot water
2 tsp sweet chili sauce or more, or chop a chili if you have one
1/2  bell pepper, any colour, chopped
1 dollop(s) tomato puree, or use ketchup
  olive oil
  salt and freshly ground black pepper, to taste
1 small can(s) kidney beans

Method

Preparation time: ca. 10 min / Cooking / Baking Time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Fry the onion, garlic, bell pepper and chili (if used) in the oil until softened. Add the tomatoes and cook until starting to give up their juice. Chop the corned beef and add to the pan, and cook until starting to break up. Mix together the stock, sweet chili sauce and tomato purée and tip into the pan, season and add the red kidney beans. Simmer for 5 to 10 minutes, adding more chili sauce to get the heat you like.

Serve with some boiled rice, or a jacket potato and some green salad.
