Au Gratin Eggs on Spinach

Ingredients

450 g spinach, stems removed and washed
hard boiled eggs, peeled and sliced
onions, chopped
2 tbsp butter
150 g freshly grated Cheddar cheese
200 g single cream
  salt and freshly ground black pepper
  nutmeg

Method

Preparation time: ca. 15 min / Cooking / Baking Time: ca. 25 min / Grade of difficulty: easy / Calories per portion: n/a

In a saucepan, melt the butter and sauté the onions until lucent. Add the dripping wet spinach and cook stirring until wilted. Season to taste with salt, pepper and nutmeg.

Preheat the oven to 200°C.

Transfer the spinach into a buttered casserole. Top with the eggs. Pour over the cream and sprinkle with the cheese. Bake for 10 minutes or until the cheese has melted.
