Cream of Cucumber Soup with Prawn

Ingredients

cucumbers, peeled, seeded and grated
4 medium onions, chopped
250 ml vegetable stock
200 g single cream
200 g sour cream
  salt and freshly ground black pepper
200 g prawn, peeled and ready to cook
3 tbsp oil

Method

Preparation time: ca. 20 min / Cooking / Baking Time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

In a saucepan, heat the oil and sauté the onions until soft. Add the cucumbers and cook, stirring frequently, over low heat for 10 minutes.

Pour in the stock and bring to a boil. Reduce the heat and stir in single cream and sour cream. Season to taste with salt and pepper. Add the prawn and simmer over low heat for a few minutes until the prawn are just cooked through.

Serve immediately.
