Curried Cauliflower Soup

Ingredients

1 tbsp butter
1 tbsp vegetable oil
1 medium onion chopped
1 head(s) cauliflower, cut in florets
1 tbsp curry powder
1/4 tsp cayenne pepper
1 tbsp chives, finely chopped
2 tbsp parsley, finely chopped
1 medium potato, peeled and cut in chunks
  salt to taste
1 l chicken stock

Method

Preparation time: ca. 10 min / Cooking / Baking Time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Heat butter and oil in a soup pot, add the onions and cook over medium heat until soft. Stir in cayenne pepper and curry powder, mix everything and cook stirring for a minute. Add potato and cauliflower. Toss well to coat with the curry mixture and sauté for 2 minutes, stirring.

Add stock and bring to boil. Lower heat as soon as boiling and simmer for about 20 minutes.

Let cool for about 5 minutes, then purée the soup with a hand blender. Season to taste with salt. Add parsley and chives right before serving.

Great for Christmas and Thanksgiving as a first course or for any other winter day, also as main course.
