Ingredients

500 g green aspragus, woody ends removed, cut into bite-sized pieces
500 g strawberries, hulled and quartered
1 head(s) lettuce, leaves separated, torn
lemon, juice
200 g sour cream
100 g single cream
1 bunch(es) parsley, chopped
  salt and freshly ground black pepper
  sugar

Method

Preparation time: ca. 15 min / Cooking / Baking Time: ca. 10 min / Grade of difficulty: easy / Calories per portion: n/a

Cook the asparagus in salted water with a pinch of sugar for 8-10 minutes or until tender but still a bit firm to the bite. Drain and allow to cool.

In a salad bowl, combine the asparagus, strawberries and the lettuce. In a separate bowl, whisk the sour cream with the single cream. Season to taste with lemon juice, salt and pepper. Stir in the parsley.

Add the dressing to the salad and toss gently. Serve immediately.
