Ingredients

350 g sugar
125 g butter
eggs
400 g flour
1 tsp baking powder
1 tsp soda water
3 tsp salt
5 tsp cinnamon
5 tsp grated ginger
5 tsp ground cloves
125 ml water
pumpkin
125 g walnuts, chopped
portions

Method

Preparation time: ca. 50 min / Cooking / Baking Time: ca. 55 min / Grade of difficulty: easy / Calories per portion: 350 kcal

Cut the stem from top of the pumpkin to allow the steam to escape while baking. Bake the pumpkin at 175°C until soft. Remove seeds and scoop the pulp into a large bowl. Alternatively peel and dice the pumpkin and cook the pulp with some water in a pan on medium heat for about 30 minutes!

In a blender combine sugar, butter, eggs, water and 250g of the pumpkin pulp and process until smooth. In a bowl mix together flour, baking powder, walnuts, soda, salt, cinnamon, ginger and ground cloves. Add the mixture into the blender and pulse only for 30-40 seconds until just combined.

Preheat the oven to 175°. Transfer the dough into a greased baking pan and bake for 55 minutes.
