Ingredients

400 g pasta
  salt
400 g pumpkin, cut into 2cm cubes
red chili pepper, seeded and chopped
1 clove(s) garlic, minced
3 tbsp olive oil
shallots, chopped
1 tsp ginger, grated
100 ml port wine
2 tbsp white wine vinegar
1 tbsp sugar, brown
1 tsp paprika powder
1 tsp turmeric powder
  nutmeg
4 tbsp freshly grated Parmesan cheese

Method

In a saucepan, heat the oil. Sauté the garlic, shallots and the ginger until soft. Add the pumpkin and the chili and cook stirring for 3-4 minutes. Pour in the wine and the vinegar. Stir in the sugar, cover and simmer for 30 minutes, stirring occasionally.

Cook the pasta in salted water until al dente. Drain.

Purée the pumpkin sauce with a hand blender. Season to taste with salt, paprika powder, turmeric and nutmeg. Mix together the cooked pasta and the sauce and toss. Serve sprinkled with the Parmesan cheese.
