Ingredients

  salt and freshly ground black pepper
1 kg cockles, cleaned
onion, chopped
2 clove(s) garlic, minced
2 tbsp oil
tomatoes, peeled and diced
150 ml dry white wine
bay leaf
1 bunch(es) parsley, chopped

Method

Preparation time: ca. 15 min / Cooking / Baking Time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

In a large saucepan, heat the oil. Sauté the onion and the garlic. Stir in the tomatoes, bay leaf and the wine. Season to taste with salt and pepper. Simmer for 10 minutes.

Add the cockles and cook over high heat until they are open.

Sprinkle with parsley and serve with fresh baguette.
