Cream of Bean and Pea Soup

Ingredients

4 slice(s) bacon, diced
500 ml vegetable stock
250 g broad beans, trimmed
250 g peas, shelled
onions, chopped
350 ml milk
  salt and freshly ground black pepper
125 ml single cream
portions

Method

Preparation time: ca. 15 min / Cooking / Baking Time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

In a saucepan, fry the bacon until golden and crispy all around . Set ¼ of the bacon aside and keep warm.

Sauté the onions until lucent. Add the stock, the milk, the beans and the peas and bring to a boil. Reduce the heat, stir in the cream and simmer for 15 minutes. Purée the soup. Reheat and season to taste with salt and pepper.

Ladle the soup into soup bowls and serve sprinkled with the remaining bacon.
