Brown Windsor Soup

Ingredients

1 stalk(s) leek, sliced
carrots, sliced
2 tbsp parsley, chopped
onions, chopped
  salt and freshly ground black pepper
3 tbsp butter
1 tbsp flour
1 1/2 l beef stock
400 g beef steak, finely diced
portions

Method

Preparation time: ca. 15 min / Cooking / Baking Time: ca. 2 hrs / Grade of difficulty: easy / Calories per portion: n/a

In a saucepan, melt the butter and sauté the onions, leek and the carrots for 5 minutes. Add the meat and cook stirring until almost browned. Dust with the flour and cook another for 1-2 minutes.

Pour in the stock and bring to a boil. Reduce the heat, cover and cook over low heat for 1.5-2 hours.

Purée the soup. Season to taste with salt and pepper. Serve the soup sprinkled with fresh parsley.
