Ingredients

700 g onions, chopped
300 g red onions, chopped
6 tsp cornflour
1 tbsp tomato puree
500 ml dry red wine
  salt and freshly ground black pepper
  sugar
1/2 tsp mustard seeds
2 tbsp oil
1 l water

Method

In a pan heat the oil and sauté the onions until slightly golden. Stir in the tomato purée and cook for another minute. Add 1 teaspoon of sugar and a pinch of salt. Cook until the sugar has caramelized. Pour in the wine and the water and bring to a boil. Add the mustard seeds, cover with a lid and simmer over low heat for 4 hours.

Strain the sauce, bring to a boll again and cook until reduced to approximately 1 litre. Stir together the cornflour and a little bit of water. Stir the mixture into the sauce and cook for another 5 minutes. Season to taste with salt, pepper and sugar.

Serve with steak and mashed potatoes.
