Ingredients

shallots, chopped
300 g single cream
150 g rocket
50 g sour cream
  salt and freshly ground black pepper
30 g butter
15 g flour
400 ml vegetable stock
  freshly ground nutmeg
portions

Method

Preparation time: ca. 10 min / Cooking / Baking Time: ca. 10 min / Grade of difficulty: easy / Calories per portion: n/a

In a saucepan melt the butter and sauté the shallots. Dust with the flour and cook for 1-2 minutes. Pour in the cream and the stock and bring to a boil.

Stir in the rocket and cook for 2-3 minutes, then purée the soup. Stir in the sour cream and season to taste with salt, nutmeg and pepper. Serve immediately.
