Line a 26cm springform pan with baking paper. Preheat the oven to 200°C.
In a bain-marie melt the chocolate together with the butter stirring constantly. Set aside and allow to cool slightly.
Meanwhile, separate the eggs. Whisk the egg whites with a pinch of salt until stiff. In a large bowl, whisk the egg yolks with the sugar until the mixture thickens. Whisk the chocolate mixture spoon by spoon into the egg yolk mixture. Finally fold in the beaten egg white.
Spoon the mixture into the springform pan and bake in the preheated oven for 35-40 minutes.
Transfer the cake on a wire rack and allow to cool slightly. Cut into slices and serve still warm.
Note:
Goes well with whipped cream, vanilla sauce or vanilla ice cream.
