Ingredients

vanilla pods, black seeds scraped out
500 g apples, peeled, cored and diced
eggs
300 ml milk
16 slice(s) toast
5 tbsp strawberry jam
100 g almond flakes
25 g sugar
3 tbsp dry white wine
1 pack(s) vanilla sugar
1 pinch(es) salt
5 tbsp butter

Method

In a pan, caramelize the sugar. Pour in the wine. Stir in the apples and the vanilla pulp and pod. Bring to a boil, cover and simmer for 10 minutes.

Beat the eggs into a bowl. Add the vanilla sugar and a pinch of salt. Spread half of the toast slices with strawberry jam. Top with the remaining toast slices, press the edges firmly together and turn the sandwiches in the egg mixture until well coated. Allow to soak for 5 minutes.

Remove the vanilla pod from the apple sauce.

In a pan heat some butter and fry the toasts one after another from both sides for 2-3 minutes. Add more butter if necessary. Sprinkle with the almond flakes while frying.

Cut the toasts into halves and serve with the apple sauce.
