Potato Salad with Gherkins and Bacon

Ingredients

800 g potatoes
120 g smoked bacon, diced
shallot, chopped
1 glass(es) gherkins
4 tbsp apple vinegar
  salt and pepper
1 tbsp mustard
1 tbsp honey
4 tbsp oil

Method

Cook the potatoes in salted water until done. Peel and slice the potatoes.

In a pan fry the bacon until crispy. Drain the gherkins and collect the liquid. Cut the gherkins in slices.

In a bowl whisk together the vinegar, 6 tablespoons of the gherkin liquid, the mustard and the oil. Season to taste with salt and pepper. Stir in the shallot.

In a salad bowl combine the potatoes with the bacon and the gherkins. Pour over the dressing and mix well. Allow to soak for 30 minutes before serving.
