Ingredients

limes, juice and grated rind
1 kg curd cheese
250 g ricotta cheese
400 g sugar
eggs
2 pinch(es) salt
1 pack(s) custard powder, vanilla
egg whites
  butter
portions

Method

Reserve 1 teaspoon of the lime juice and set aside.

In a bowl mix together the curd cheese, ricotta, the remaining lime juice, lime zest, custard powder, half of the sugar and a pinch of salt. Beat in the 6 eggs.

Preheat the oven to 160°C. Spread the dough on a buttered baking tray and flatten. Bake for 30 minutes.

Mix together the reserved teaspoon of lime juice, the egg whites and a pinch of salt. Whisk until stiff, while adding bit by bit the remaining sugar. Coat the baked cake with the beaten egg white and bake for another 15 minutes.

Place the cake for at least 1 hour on a cool place.
