Cheese and Asparagus Soup

Ingredients

500 g asparagus, woody ends removed, sliced
1 pinch(es) sugar
  salt and pepper
lime, juice
1 tbsp butter
1 tbsp flour
250 g grated cheese (Cheddar or Gouda)
4 tbsp basil leaves
1 l water
portions

Method

Cook the asparagus in the salted water with a pinch of sugar and a dash of lime juice for 10 minutes. Remove the asparagus pieces from the broth, set aside and keep warm.

In a saucepan, melt the butter. Stir in the flour and cook stirring until pale yellow. Pour in the asparagus broth, bring to the boil and cook for 5 minutes. Add the cheese and cook stirring until smooth and well combined. Add the asparagus and season to taste with salt, sugar and lime juice.

Serve the soup garnished with basil leaves.
