Ingredients

500 g ripe tomatoes, seeded, quartered
100 g shallots, diced
2 clove(s) garlic, chopped
3 tbsp olive oil
50 g basil, chopped
30 g parsley, chopped
250 g single cream
egg yolks
100 g freshly grated Parmesan cheese
  salt and pepper
  tabasco

Method

Preparation time: ca. 10 min / Cooking / Baking Time: ca. 25 min / Grade of difficulty: easy / Calories per portion: n/a

Preheat the oven to 170°C.

In a skillet, sauté the tomatoes, shallots and garlic in the olive oil. Add in the basil and the parsley. Spoon the mixture into a casserole dish.

Mix the single cream with the egg yolks and the Parmesan cheese. Season with salt, pepper and Tabasco. Pour the sauce over the tomatoes and bake in the preheated oven for 25 minutes.

Serve warm and fresh as a side dish for 4 or with crusty white bread as a vegetarian main dish for 2.
