Herb and Mushroom Crusted Fish

Ingredients

fish fillets (any white fish)
200 g mushrooms, white and brown, chopped
50 g fresh spinach, chopped
1 bunch(es) parsley, chopped
1/2 bunch(es) dill, chopped
2 clove(s) garlic, chopped
onion, chopped
  salt and pepper
 some oil
 some breadcrumbs
  freshly grated Parmesan cheese

Method

Preparation time: ca. 10 min / Cooking / Baking Time: ca. 35 min / Grade of difficulty: easy / Calories per portion: n/a

Place the fish fillets into a greased oven proof dish and season with salt and pepper.

Fry the onion and garlic in some oil until tender, add the mushrooms and season to taste. Now add the herbs and spinach and cook for 4-6 minutes. Pour the mixture over the fish fillets and sprinkle with Parmesan cheese and breadcrumbs. Bake in the oven at 200°C for 20-25 minutes.

Serve with rice or boiled potatoes.

Used Mahi Mahi for the fish.

Used Bok Choi instead of spinach.
