Ingredients

500 g poultry breast fillet, cut in 3cm cubes
red bell peppers, diced
250 g mushrooms, sliced
200 ml single cream
200 g crème fraîche
3 tbsp Metaxa
  salt and freshly ground black pepper
3 tbsp tomato puree
200 g grated cheese (Cheddar or Gouda)
  sugar
onion, chopped
2 clove(s) garlic, mashed
5 tbsp oil
1 tbsp dried thyme and oregano
 some butter

Method

Preparation time: ca. 20 min / Cooking / Baking Time: ca. 40 min Resting time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

In a bowl, combine the oil, dried herbs and meat. Season with salt and pepper. Cover and set aside for 30 minutes.

Preheat the oven to 200°C.

In a pan, sauté the meat, onion and garlic. Stir in the bell peppers and the mushrooms. Cook over medium heat for 5 minutes. Stir in the cream, crème fraîche, Metaxa and the tomato purée and cook for 2 minutes. Season to taste with salt, pepper and sugar.

Transfer all into a buttered casserole dish. Sprinkle with the cheese and bake for 20 minutes.

Serve with rice, chips or fried potatoes.
