Frittata with Smoked Salmon and Rocket

Ingredients

eggs
1 handful rocket leaves, sliced
100 g smoked salmon, cut into slices
  salt and pepper
2 tbsp sparkling water
2 tbsp olive oil

Method

Beat the eggs lightly, stir in the rocket and the water and season with salt and pepper.

Heat the olive oil in a pan. When really hot, pour in the egg mixture and tilt the pan to spread the egg mixture thinly. Cook for about 45 seconds or until just set, then take from heat and arrange the smoked salmon on top.

Transfer the frittata to a plate and serve immediately.
