Beer Can Chicken

You need a kettle BBQ

Ingredients

chicken, 1.3 to 1.5kg
1 tsp mustard powder
1 tsp paprika powder
1 tsp onions, granulated
1 tsp salt
1/2 tsp garlic, granulated
1/2 tsp coriander, ground
1/2 tsp cumin, ground
1/2 tsp black pepper, freshly ground
2 tbsp olive oil
1 large can(s) beer

Method

To make the rub, mix together all dry ingredients and set aside.

Remove and discard the neck, giblets and any excess fat from the chicken. Rinse the chicken under cold water and pat dry inside and outside with paper towels. Brush the chicken all over with olive oil and season inside and outside with the rub.

Open the beer can and drink half of the beer. Set the half full can on a flat surface and slide the chicken over the top so the can fits inside the cavity. Close the opening at the neck with some overlapping skin or with an onion to keep the steam inside the chicken. Transfer the chicken to the grill. Carefully balance the chicken with its legs and the can to sit upright. Grill over medium indirect heat for about 80 minutes.

Wearing BBQ mitts, carefully remove the chicken and can from the grill. Lift the chicken from the can, carve and serve with green salad.
