Smoked Salmon with Pasta

Ingredients

175 g pasta of your choice - I used spaghetti
200 g smoked salmon, thinly sliced in strips
1/2  red onion, chopped
1 small bunch of rocket
6 leaves red chicory (or use green if you can't find red or use radicchio), sliced
  crème fraîche, a small tub
2 tbsp horseradish sauce
1/2  lemon, cut into very thin slices and then cut into four
1 tbsp Parmesan cheese, freshly grated
  salt and pepper, to taste

Method

Preparation time: ca. 10 min / Cooking / Baking Time: ca. 10 min / Grade of difficulty: easy / Calories per portion: n/a

Bring salted water up to the boil and add the pasta and cook for the designated time.

In the meantime finely chop the onion and prepare the smoked salmon. As soon as the onion is soft, add the smoked salmon and stir until it becomes lighter in colour. Mix the horseradish sauce into the crème fraîche and add into the pan together with the lemon pieces. Stir and then stir in the rocket and the chicory or radicchio.

When ready, drain the pasta and pour over the sauce and serve. Sprinkle Parmesan over the dish if you like.
