Ingredients

400 g ribbon noodles
1 bunch(es) bear's garlic, finely sliced
shallots, cubed
1 tbsp butter
200 g single cream
3 tbsp Parmesan cheese, freshly grated
  salt and pepper, to taste

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Cook the pasta in salted water until al dente.

In a saucepan, melt the butter. Add the shallots and fry for 5 minutes over low heat until golden. Stir in the single cream and bring to a boil. Reduce the heat and stir in the Parmesan cheese. Season with salt and pepper. Add the cooked ribbon noodles and simmer over low heat for a minute.

Fold in the bear's garlic and simmer for 1 more minute. Toss in the pasta and serve.

Presumably one can substitute ordinary garlic?

Yes of course, but the taste will be much different; if you don't get bear's garlic I would replace with garlic together with light green leek strips, julienne cut. They need a few minutes longer to get cooked.

I think Bear's garlic is what is known as Ramsons in the UK - Allium Ursinum. You have to be a wild food forager to find it.
