Kale Soup with Smoked Goose Breast
A warming soup for cold days

In a large saucepan, bring to a boil 3 litres of water with 1-2 pinches of salt. Wash the kale and strip the leaves from the stem. Blanch the kale for three minutes, drain, then immediately transfer into cold water to chill. Drain well then finely chop the kale.
Finely dice onions. Heat up margarine in a saucepan and fry the onions until translucent and add the kale. Pour in the stock, cover, bring to a boil and simmer for 10-15 minutes.
Peel and grate the potatoes and add them to the soup. Bring again to a boil and simmer for some further minutes. Take the soup from heat, stir in the single cream and season to taste with salt, pepper and honey.
Finely slice the smoked goose breast.
Ladle the soup into heated soup plates and sprinkle with the goose breast stripes.
