Ingredients

16 large king prawns, heads and shells intact
50 g sugar
60 ml fish sauce
1 tbsp vegetable oil
2 stalk(s) lemon grass, root ends trimmed and finely ground
star fruit, thinly sliced

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

With a sharp knife, make a cut through the prawn shells along the back. Devein, leaving the shells intact. Rinse the prawns and pat dry.

In a bowl, mix together the fish sauce and the sugar, until the sugar is dissolved. Add the oil, lemon grass and prawns. Cover and allow to steep in the refrigerator for 3 hours.

Place the marinated prawns on a grill and cook until the prawns turn pink.

Place the grilled prawns on serving plates, garnish with the star fruit slices and serve with fresh bread.
