Ingredients

1 tbsp peanut oil
1 tsp cumin, ground
2 tbsp red onion, chopped
1 1/2 tbsp brown sugar
1 tsp soy sauce
1/4 tsp red pepper flakes
2 large star fruit, thinly sliced
1 large avocado, peeled and sliced
80 ml rice wine vinegar
450 g fresh spinach, cleaned and dried

Method

In a small pan, fry the cumin for 30 seconds in peanut oil. Stir in the onions and cook over medium heat for 3 minutes, until soft. Stir in the rice wine vinegar, sugar, soy sauce and red pepper flakes and mix well.

In a bowl, mix together the spinach with 3 tablespoons of the warm dressing. Place the spinach on serving plates, top with star fruit and avocado slices and sprinkle with the remaining dressing.
