Light Tomato Sauce

Ingredients

1 medium onion, chopped
2 clove(s) garlic, finely chopped
1 tbsp olive oil
6 large tomatoes, peeled, seeded and chopped
1/2 tsp sugar
1/2 tsp basil, dried - or 1˝-2 tsp fresh
60 ml red wine
  salt and fresh ground pepper, to taste

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

In a medium saucepan, heat the oil on a medium heat and sauté the onion and garlic until translucent. Add the tomatoes and cook for about 3 minutes, followed by remaining ingredients. Reduce heat to a simmer and cook for another 15-20 minutes, when the tomatoes should have lost shape and texture. If not, allow another 5 minutes and add a little more wine if it appears to be drying out.

Serve with hot, freshly cooked pasta - preferably fettuccine or tagliatelle - and top with fresh Parmesan or Pecorino.
