Ingredients

1 1/2 tbsp butter
2 medium leeks, sliced
800 ml vegetable broth
200 g broccoli, chopped
200 g carrots, peeled, sliced
2 large potatoes, peeled, cubed
200 g cabbage, sliced
1 tsp dried rosemary
  salt and pepper, to taste

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Melt butter in a large saucepan over low heat. Add leeks and cover. Cook until just softened, about 5 minutes.

Add broth, vegetables, potatoes, cabbage and rosemary. Bring to a boil and then reduce heat; partially cover pan and cook until all vegetables are tender, about 15 minutes.

Season with salt and pepper, if required.
