Lemon, Lime and Peppermint Sorbet
| 200 g | sugar |
| 275 ml | water |
| 5 medium | limes, juice and zest |
| 5 medium | lemons, juice and zest |
| 1 bunch(es) | peppermint |
Method
Bring the water and sugar to a boil in a saucepan and simmer for 5 minutes. Remove from heat aand allow to cool to lukewarm. Add the fruit juices and zest and stir in.
Finely chop the peppermint and stir in. Pour into a freezer-proof container and freeze for 2 hours. Remove from freezer every 30 minutes and whisk with a hand mixer for about 1 minute and return to freezer.
Remove from freezer about 10 minutes before needed to allow to soften. Serve 2 scoops per person.
