Grilled Salmon with Creamed Parmesan Spinach

Ingredients

salmon fillets, approx 200g each with scales removed
400 g spinach
150 ml double cream
125 g Parmesan cheese, grated
1/2 tsp nutmeg
  salt and fresh ground pepper, grated

Method

Preparation time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Preheat the grill on a medium heat.

Wash the spinach well and shake off excess water. Heat a large lidded pan and add the spinach. Cook for a bout 30-60 seconds until wilted, tossing once or twice if required. Refresh the spinach in cold water and squeeze out as much liquid as possible and chop it finely. Place in a bowl and combine with cream, grated cheese and nutmeg. Add seasoning.

Place the fillets skin side up on the grill and cook for about 5 minutes. Turn the fillets over and grill for another 5 minutes. Top with the spinach mixture and return to the grill until golden.

Serve immediately.
