Ingredients

110 g butter
50 g pecans, chopped
100 g wholenut chocolate or hazelnut milk chocolate, roughly chopped
225 g caster sugar
3 medium eggs
1 tsp vanilla extract
115 g self-raising flour
35 g unsweetened cocoa powder
1 pinch(es) salt
30 g butter, to be melted in baking tray

Method

Preheat oven to Gas Mark 4, 180°C, 350°F.

Place the 30g of butter on a 8x8 inch (20x20cm), or thereabouts, baking tray and place it in the oven to melt. Remove, brush the butter evenly all around, including the sides, and set aside.

Melt about half the remaining butter in a small saucepan.

Place the chopped nuts and chocolate in a bowl and add the melted butter.

Beat the eggs with the vanilla and add to the mixture. Mix together flour, cocoa and salt and add them to the bowl and mix thoroughly.

Spread the mixture evenly over the baking tray. Bake for 25-30 minutes. If the edges are firm and the centre is soft and moist, it is done.

Cool completely in tin before cutting and removing.

When cold, cut into 4x4 inch (10x10cm) squares to serve. I would suggest that you halve the serving for children, to 2x4 inch rectangles.
