Rice with Zucchini Tomatoes and Corn
As a warm side dish or a cold salad snack| 140 g | rice |
| 1 small | zucchini, grated |
| 200 g | tomatoes, chopped |
| 200 g | corn |
| 50 ml | vegetable broth |
| 400 ml | water |
Method
Heat water until boiling. Add vegetable broth, rice and grated zucchini and cook until tender, about 20 minutes. Stir occasionally.
When done, add chopped tomtaoes and corn and mix well.
Serve warm or cold.
