Ingredients

500 g pasta, short
500 g zucchini, grated
1 clove(s) garlic, minced
80 ml olive oil
90 g Parmesan cheese, grated
200 g Mozzarella cheese, grated
30 g fresh parsley, chopped
  salt and pepper, to taste

Method

Preparation time: ca. 10 min / Grade of difficulty: medium / Calories per portion: n/a

Cook the pasta in a pot of salty boiling water until nearly al dente. Drain and set aside.

Heat the oil in a pan on medium heat and add in garlic and sauté for about 30 seconds. Add the pasta to the sautéed garlic and toss well.

Add the cheeses and toss again. Add the remaining ingredients, mix them together well and cook until the cheese and the moisture from the zucchini coats the pasta. The pasta should then be al dente.
