Vegan Banana Loaf
| 400 g | flour |
| 100 g | sugar |
| 100 ml | oil |
| 2 tsp | baking powder |
| 3 | very ripe bananas, mashed |
| 120 ml | soya milk |
| 1 tsp | vanilla essence |
| 1 handful | walnuts, chopped |
Method
Put the sugar, baking powder, vanilla essence and oil in a large bowl and beat until the grainy sound of the sugar starts to disappear.
Add the flour, mashed bananas, soya milk and walnuts and mix thoroughly. Grease or line a large loaf tin with baking paper and pour the mixture in. Bake for about an hour. Even allowing a bit more time sometimes.
It also tastes great when chopped dark chocolate(Green&Black's does a nice vegan one) or other nuts and dried fruit are added. And for a more wholesome version you can substitute some of the flour for spelt or wholemeal flour.
