Papaya Salsa
Makes about 500 ml| 1 tbsp | olive oil |
| 3 | shallots, minced |
| 3 tsp | ginger, finely minced |
| 1 tsp | curry powder |
| 1 | papaya, peeled, seeded, chopped |
| 3 tbsp | lime juice |
| 1 tsp | fresh cilantro, chopped |
Method
Heat oil in a small saucepan over medium heat. Add shallots and ginger and sauté for 6-7 minutes in the oil.
Remove from heat and stir in curry powder.
Transfer mixture in a blender or food processor and add papayas, lime juice and cilantro. Process until blended.
Refrigerate for 1 hour before serving.
